Bangkok Curry Bowls
Noodles & Sauce
Soak the noodles in a bowl of cold water for 20 minutes. Drain and rinse.
Heat the oil in a large saucepan. Add the shallots and ginger. Cook 3-5 minutes. Add the curry paste, coconut milk, broth, sugar and soy sauce. Simmer for about 15 minutes.
In a wok, heat the oil. Add onion, carrots, broccoli and asparagus. Stir and cook until veggies are light green.
Add the noodles and toss. Add the sauce and stir together until combined.
Top with sesame seeds, lime and basil.
