Spinach, Orzo & Pesto Soup
In a large stockpot, heat the oil over medium-high heat.
Add the onions and cook until soft.
Add the carrots, celery, and garlic. Sauté for about 5 minutes.
Add the stock, tomatoes, pesto, orzo, thyme and oregano. Cook until the orzo is al-dente, about 10 minutes. Stir occasionally.
Add the spinach and cook for about 1 minute, until the spinach wilts. Season and serve.
