A simple and flavorful dish that works well as a side or an entree.
Szechuan Tofu & Green Beans
Whisk 1/4 cup water, soy sauce, tomato paste, red pepper and 1 tsp cornstarch in a small bowl. Set aside.
Heat 1 Tbsp oil in a wok. Add the tofu and spread and let cook for 2 minutes. Turn gently. Cook until lightly browned and crispy, Set aside.
Add the remaining 1 Tbsp oil. Add green beans, garlic and ginger. Stir constantly for a minute.
Add the remaining 1/4 cup water, cover and cook until the beans are tender and slightly crisp, about 2-4 minutes.
Add the soy sauce mixture to the wok. Cook, stirring until thickened. Add the tofu and stir until heated through, about another minute.
