Tofu and Bok Choy with Peanut Sauce and Rice
Bok choy is the best. Baked, boiled, sauteed… hell, it’s even good just raw. Add some spice to your bok choy’s life, slap a couple slices of tofu on it and call it dinner.

  1. Preheat oven to 400 F.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sriracha, peanut butter, and salt.
  3. Line a sheet pan with parchment paper. Brush both sides of the tofu slices with the sauce and place on the pan. Bake for about 30 minutes. Flip each slice over halfway through.
  4. In a wok, heat sesame oil. Add garlic and bok choy. Add the remaining sauce and saute for about 10 minutes, or until the bok choy is crisp-tender.
  5. Add cooked rice into a bowl (or however you feel like serving it.) Add the bok choy, tofu, green onions, and top with sesame seeds.
